Theory! Grandfather not only knows about the Helpers, he's been making use of them for years! (Come on, can you honestly imagine him cooking, complete with a "Kiss the chef" apron?) This is how he's managed all by himself in a huge house with no servants.
So why are they only appearing to Peter now? Well, perhaps there's a legacy that's being passed down to him now that Grandfather is on the way out, perhaps there's a binding ritual that specifies Grandfather as the sole master and he's been too busy to renew that...a hundred options!
Undalbu = an African forest spirit renowned for its enormous ears and habit of luring woodsmen into embarrassing positions (such as face down in a pile of elephant poop).
Two options. Either grandfather knows about them in theory but has never seen their handiwork, or they come with a consequence so deep and dire that their positive effect isn't worth it.
